The most common of mustard seeds, the yellow seed is what makes the traditional mustard we find in stores. Common uses are in pickling, canning, sausage making, sauces and dressings.

Brown mustard seed is more bitter and pungent than yellow mustard. It is more often used in Asian and African cooking.
